All of Champion's Leaf Gelatine (aka Sheet gelatin) are unflavored, and are excellent, versatile thickeners for both sweet and savory cooking. Although the name may suggest it, they are not made from leaves. "Leaf" is just another way of saying "sheet". All of our gelatine is animal based (the standard for all gelatine) and there really is no such thing as "plant gelatine" or "vegetarian gelatine".
Gelatine dissolves into a thin, clear, flawless sauce when mixed with a liquid. Once it cools, however, the liquid with thicken or firm-up into a flavorful solid. The unique properties of gelatine allow that solid to become fluid again as soon as it hits the warmth of your mouth. No other food ingredient in the kitchen can do this! There are three different types of Leaf Gelatine: Gold, Silver, and Bronze. While they are very similar there are some important attributes that set them apart. The key attribute of all gelatine is what is called "bloom strength". This number represents the gelatine's ability to thicken - or rather, "gel" - a liquid. The higher the bloom strength number, the stronger the gelatine's gelling strength will be.
This might seem confusing, and you might ask, "What if my recipe calls for Bronze sheets, and all I have is Silver? How do I convert my recipe to Silver Sheets?". Well, we have good news! Converting Between Types of Champion Leaf Gelatine is Easy!Unlike other brands, with Champion Leaf Gelatine it doesn't matter what type your recipe calls for: You can use the same amount of any type – Bronze, Silver, or Gold! For example, let’s say your recipe calls for 1 sheet of Bronze Leaf Gelatine:
1 sheet of Bronze = 1 sheet of Silver = 1 sheet of Gold. The same amount of any type will work very similarly! |
As you can see, you can substitute any type of Champion Leaf Gelatine and your recipe will yield similar results. With Champion’s Leaf Gelatine, it’s that easy! This is because we have already calculated the exact interchangeable ratio of gelatine bloom and quantity of gelatine needed and incorporated it into each type of sheet. The thickness of the gelatine sheets (amount of gelatine in each sheet) is slightly different for Gold, Silver and Bronze. Keep in mind, however, that if you are working with very delicate flavors (or do not want to dilute your recipe's taste) we recommend you use Gold sheets, as there is less - but stronger - gelatine in each sheet.
